If you want really good cheese with pasta, make your way to Osteria Pastella in Florence.

They start by using high proof alcohol to burn the cheese wheel. This increases the heat to melt the cheese as well as acts as a sanitiser. The flavours also blend really well with the melted cheese.

Once the alcohol is all burnt this scrape the cheese off and then adding hot pasta and combine. A bit of hot water to combine it all again and they serve this dish with grated truffle.

It is one of the best cheese wheel pastas I have had. The portion looks small, but it’s rich and delicious.
