Ingredients:
* 1.5–2 lbs beef short ribs (bone-in)
* 1 cup dry red wine
* 2 cups beef broth
* 2–3 tbsp tomato paste
* 1 small onion, finely diced
* 3–4 garlic cloves, minced
* 1 carrot, finely diced
* 2 celery stalks, finely diced
* 2–3 sprigs thyme
* 1–2 sprigs rosemary
* 1 bay leaf
* Olive oil
* Salt + black pepper
* Paccheri pasta
* Parmesan rind (optional)

Step-by-Step:

1. Season & Sear
* Pat ribs dry, season generously with salt + pepper
* Let them sit 15–30 minutes at room temp
* Heat olive oil in a heavy pot
* Sear ribs on all sides until deeply browned (3–4 min per side)

2. Build the Base (soffritto)
* Remove ribs
* In same pot, add:
* onion
* carrot
* celery
* Cook 5–7 mins until soft
* Add garlic, cook 30–60 seconds
*This mix is called a soffritto, it’s traditional Italian flavor base

3. Tomato Paste
* Add tomato paste
* Cook 1–2 mins until it darkens slightly
*This removes the raw taste and deepens flavor

4. Deglaze with Wine
* Pour in wine
* Scrape bottom of pot (all that flavor )
* Let simmer 5–7 mins to cook off alcohol

5. Braise
* Add ribs back in
* Add beef broth
* Add thyme, rosemary, (bay leaf if using)
* Add Parmesan rind (optional)
*Liquid should come halfway up the meat

Cover and cook:
* Oven: 300 degrees F for 2.5–3 hours
OR
* Stovetop: low simmer 2–3 hours

6. Shred & Finish Sauce
* Remove ribs, shred meat (discard bones)
* Return meat to sauce
* Simmer uncovered 15–20 mins to thicken
*Optional: remove herbs + strain if you want smoother sauce

7. Cook Pasta
* Boil paccheri in salted water
* Cook just under al dente
* Save pasta water

8. Combine
* Add pasta to sauce
* Splash of pasta water
* Toss until glossy and coated

Finish:
* Drizzle olive oil
* Top with parmesan
* Parsley or basil for garnish
