After thousands of times, you stop thinking you just move.

Guanciale
Egg yolk
Pecorino Romano
Grana padano
Black pepper

No shortcuts. No talking. Just repetition.

    Noodles

    Parmesan cheese

    Parmesan cheese

    Parmesan cheese

    Pancetta

    Parmesan cheese

  7. My favourite pasta. Great to watch a proper chef in his kitchen – straight process no nonsense! Thanks!

I noticed that you wasted nothing, the bark from the pork was reserved for later as was the cheese rind. Respectful and cost effective!

  8. That squishy sound when he tosses the pasta with the cream sauce in it.Where have I heard it before, 🤔

I'm not gonna lie it got me excited 😂🤣

  9. When the resturant is open how many of you are in that kitchen? How do you keep up with demand with such a small kitchen? Looks phenomenal.

  10. Vivo in Italia. Dove si trova il vostro ristorante? Mi piacerebbe molto cenare lì se mi trovassi da queste parti.
