1 sausage (bratwurst-style)
~100 g bacon
This sauce breaks every rule – and that’s exactly why it works.
Sausage, bacon, a whole onion with the skin on, and an entire head of garlic get fried first. Then everything is chopped and mixed with ground beef, tomato paste is cooked down, and it’s deglazed with red wine.
After simmering for an hour, Parmesan goes in.
Dirty Pasta Sauce.
Works with any pasta. Seriously.
500 g ground beef
1 whole onion (skin on)
1 whole head of garlic
1 carrot
2 tbsp tomato paste
150 ml red wine
500 g strained tomatoes (passata)
Parmesan
Italian herbs
Salt
Black pepper
Oil
🔥 Process (clean + structured)
1. Build the dirty base
Heat oil
Fry sausage, bacon, whole onion (skin on), whole garlic head, black pepper
👉 Goal: deep roasted, smoky flavor
2. Break it down
Finely chop sausage and bacon
Roughly chop onion and garlic
3. Meat base
Mix everything into the ground beef
Add finely chopped carrot
4. Umami boost
Add tomato paste and cook it down properly
👉 This step is critical
5. Deglaze
Add red wine
👉 Scrape up all the flavor from the pan
6. Build the sauce
Add strained tomatoes
Let simmer for 1 hour
7. Finish
Grate in Parmesan
Season with salt, Italian herbs, and basil
