    Ingredients: (6 servings)

    * 400g pasta
    * 2 feta blocks(400g)ย 
    * 500g mushrooms, sliced into small chunks
    * 2 onions, slivered
    * 120g baby spinach
    * 2 teaspoons dried thyme
    * 1 teaspoon oregano
    * 4 tablespoons olive oil

    Steps:

    * Preheat oven to 200ยฐC (180ยฐC fan)/400ยฐF
    * Add mushrooms to a baking dish
    * Add onions
    * Add 4 tablespoons olive oil
    * Add 2 teaspoons dried thyme
    * Add 1 teaspoon dried oregano
    * Mix well to coat the vegetables
    * Place 2 feta blocks in the middle, flipping to coat in oilย 
    * Spread the vegetables around evenly
    * Bake for 25 minutes at 200ยฐC (180ยฐC fan)/400ยฐF
    * Meanwhile, cook pasta until al dente
    * Mash the feta and mix it with the vegetables to create a flavourful sauce
    * Add the baby spinach
    * Add some pasta water to help wilt the spinach
    * Mix until spinach has wilted
    * Add the cooked pasta
    * Mix everything together and you are done!
