Spaghetti all’Assassina, or Assassin’s Spaghetti, is one of the most unique pasta dishes you’ll ever make. No boiling, no separate pot. Dry spaghetti goes straight into a screaming hot pan with passata and chars until it’s crispy, spicy and deeply flavorful.
Ingredients
– 1/4 cup olive oil
– 2 cloves garlic, smashed
– 1 tbsp chili flakes (or to taste)
– Dry spaghetti (do not pre-cook), used half of the bag
– 2 cups passata (uncooked strained tomato puree)
– Tomato liquid: 2-3 cups boiling water + 2 tbsp tomato paste + 1 cup passata + salt
Instructions:
– Fry garlic and chili in olive oil
– Add dry spaghetti straight in, toss and fry until it starts to color
– Pour in the passata and let it cook and char
– Keep adding tomato liquid one ladle at a time, tossing and moving the pasta as it caramelizes. It takes patience, but that patience is exactly where the flavor comes from
