Italian Stuffed Pork Pinwheels over a Creamy Rotini Pasta!

𝑷𝒊𝒏𝒘𝒉𝒆𝒆𝒍 𝑺𝒕𝒖𝒇𝒇𝒊𝒏𝒈:
– 1 white onion chopped
– 4 cloves garlic chopped
– 1 bunch basil chopped
– 2 cup sun dried tomatoes

Butterfly a tenderloin and lay some prosciutto down. Cover it with the stuffing and sprinkle some shredded Parmesan cheese. Roll it up tight and secure with twine and skewers.

𝑷𝒂𝒔𝒕𝒂 𝑺𝒂𝒖𝒄𝒆:
– 1 white onion chopped

– 2 cup cherry tomatoes
– 6oz prosciutto
– 1 bunch basil chopped
– 1/4c chicken broth
– 1C heavy cream
– 2T Italian seasoning
– pinch salt

sauté everything together until the onions are tender and sauce thickens. Add in your rotini pasta and cook for a few minutes to coat the pasta.
