📕 For the dough:
• 200g (7 oz) 00 flour
• 86g (3 oz) water
Instructions:
1. Make the dough and let it rest, wrapped, for 30 minutes.
2. Roll it out to 1.5 mm (0.08 in) thick and cut into squares.
3. Place the squares over a textured sheet and press with a rolling pin.
4. Cut into 3×6 cm (1.18×2.36 in) rectangles and shape into Farfalle.
🔔 Secret tip: Before pinching, place a skewer in the center of the rectangle. This prevents double thickness and keeps the shape balanced.
