Ingredients

Steak:
2 filet mignon steaks, 1 tsp salt, ½ tsp pepper, 1 tbsp olive oil, 3 tbsp butter, 3 garlic cloves, 1 thyme sprig

Red Wine Sauce:
½ cup red wine, ½ cup beef stock, 2 tbsp cold butter, ½ onion (finely chopped), 1 garlic clove, thyme

Creamy Pasta:
2 cups cooked pasta, 2 garlic cloves, ½ onion, ½ tsp salt, ½ tsp pepper, ¼ tsp smoked red pepper, ¼ cup ketchup, 1 cup heavy cream, ½ cup Parmesan, 3 tbsp cream cheese

Instructions
1. Steak
Bring steaks to room temp (30–40 min). Pat dry and season with salt and pepper.
2. Sear
Heat skillet with olive oil on high. Sear steaks 1 min per side.
3. Butter Baste
Add butter, garlic, thyme. Baste steaks for a few minutes until desired doneness. Rest 5–7 min.
4. Red Wine Sauce
In same pan sauté onion and garlic. Add wine + thyme, reduce by half. Add beef stock and simmer 3–4 min. Remove thyme, whisk in cold butter. Strain for smooth sauce.
5. Creamy Pasta
Sauté garlic and onion. Add salt, pepper, smoked red pepper. Stir in ketchup and cream, simmer 2–3 min. Add Parmesan and cream cheese. Toss with cooked pasta.
6. Serve
Plate pasta, add steak, spoon red wine sauce over the top.

  1. Try a stainless steel pan! You get a much better heat distribution and a sear on steaks! Perfect for a nice crust. Also maybe a microplane might make your life easier for dealing with garlic 🙂
