– Cavatelli – 1 cup white wine – 7 garlic cloves, ground – 1 lb ground lamb – 1 bushel (???) of broccoli rabe, cut leaves and no stems/florets (preference) – Salt – White or Black Pepper – Red Pepper – Chicken Broth (about 1 cup) – Parmesan and Romano cheese sprinkled to taste – Olive Oil – Lemon juice (1 lemon) – Lemon Zest (optional)
Cook pasta
Add oil to the pan, brown ground lamb with salt, pepper, red pepper.
Add broccoli rabe, chicken broth and wine, and cook for a few min until alcohol is burned off and broccoli rabe shirnks. Add chicken broth as needed, my family likes it with some juice at the bottom of the plate.
Add garlic halfway through cooking off the wine, cook for another 1-2 min. Mainly don’t burn the garlic honestly can be added anywhere. Squeeze lemon juice and add lemon zest.
Toss in pasta and coat with the juices and such, turn off heat
Sprinkle cheese mixture and toss until well coated, also like to add more red pepper at this point to taste
