Creamy, silky and packed with flavour. Smoked salmon, lemon and dill finished with Parmesan for a simple restaurant-style pasta.
• 250 g smoked salmon or fresh salmon
• 2 tbsp extra virgin olive oil
• 1 tsp minced garlic
• ½ tbsp capers
• 1 tsp fresh red chilli paste or chilli flakes
• 1 tbsp diced brown onion
• 1 tbsp tomato paste
• ¼ cup white wine
• 1 cup thickened cream
• Salt and pepper
• Lemon zest (lemon juice optional)
• Fresh dill
• 120 g spaghetti
• 2 tbsp grated Parmesan
1️⃣ Heat olive oil in a pan and sauté garlic, capers, chilli paste and diced onion until fragrant.
2️⃣ Add tomato paste and cook it off to deepen the flavour.
3️⃣ Add most of the smoked salmon (reserve some for garnish), then deglaze with white wine.
4️⃣ Once the wine reduces, add thickened cream and season with salt and pepper.
5️⃣ Add lemon zest, fresh dill and a squeeze of lemon juice if you like. Let the sauce reduce slightly.
6️⃣ Add spaghetti, boiled in well-salted water just before al dente.
7️⃣ Toss everything together, turn off the heat and add grated Parmesan. Adjust the sauce with pasta water.
✨ Serve with fresh dill and smoked salmon on top.
