Chicken Cutlet
2 chicken breast, butterflied and beaten until thin. salt and pepper
flour dredge, garlic powder, paprika, salt
2 eggs
panko, sesame seeds, parm
topping: tomato passata, fresh mozzarella, parm, basil
pasta:
bucatini, tomato passata, pasta water, butter, parm, salt
1. beat and season the chicken
2. make all 3 coating stations
3. start with flour, then egg, then panko. repeat with all chicken and set to the side
4. boil pasta in heavily seasoned water
5. add cooked pasta, tomato passata, parm, butter, and some pasta water to new bowl
6. emulsify and set to the side
7. heat 1/2 inch of oil in a large pan to 375 degrees
8. shallow fry chicken cutlets until golden brown
9. remove chicken and layer on tomato passata, fresh mozzarella, and parm
10. bake at 450 until cheese melts, about 3 minutes
11. broil until cheese bubbles and browns
12. add basil, plate pasta, plate cutlet
