I start by quickly cooking clams with white wine or water garlic and herbs until shells just open. Strain saves the cooking liquid, ( use it for cooking rice )and starts removing clams from shells. You’re now ready to start cooking risotto with clams, it is delicious and different from spaghetti alle vongole. I also used fennel instead of onion and adding wild fennel leaves and pecorino cheese I could not ask for more of the most delicious plate of food 😋🐚
