Creamy Tomato Basil Butter Beans

It’s kinda like a creamy tomato basil soup but with beans – superrrrr easy to whip up and vegan/dairy-free:)

Recipe:
1. Sauté 1 diced onion, 5 cloves minced garlic, 1/2tsp salt and 2tsp paprika in oil over medium-high heat.
2. Once softened, turn heat down to medium and add 2 cups of tomato sauce, 1/2 cup veg stock and 1 can of strained butter beans(540ml). Let simmer for atleast 10mins to thicken.
3. For basil oil, blend fresh basil and neutral oil together then strain, or just sub for basil pesto.
4. To the beans, stir in a few Tbsp cream cheese (VF) until fully incorporated, then drizzle on basil oil on top and serve with pita!

  1. Nice, will do. I try to not use canned beans anymore. From my african friends I learned about black beans which are way more delicious – they add this umami flavor.
