You might think that the Suppli, Rome’s most famous and iconic street food, is a distant cousin of Sicilian arancini. That’s an easy way to piss off a Roman. It’s actually more inspired by the French than the Italians — it’s closer to a French croquette than an Italian arancini. The word suppli means surprise in French. It comes from the Napoleonic occupation of Italy in the 19th century, thought to be linked to the croquette de riz from France. The Italians added a piece of mozzarella inside, and the French were like “suppli,” surprised by the filling, and the name stuck. Its true name, Suppli al telefono, comes from the resemblance to a telephone wire, back when we had them, once you pull it apart. A much easier and more practical Italian rice ball to bring from Italy into your home. This is suppli al telefono.

  1. Pronunciation is tel-EF-ono. Not tele-FON-o. Stress is on the second syllable.
    Also risotto is not re SEW toe, but ri-ZOTT-oh.
    But I don't think Americans can make the two types of o in risotto: first closed, second open, but both short, pure sounds. The American o is very long.

  3. if you want a crispier batter consder that wheat starch bind to oil but Rice flour does not. So maybe try potato and rice starches to take up two thirds of that batter.

  4. I'm thinking what the Italians called "suppli" was them hearing the French word "surprise" (soor-PREEZ in English), or, even more likely, taken from a phrase like "es-tu surpris?" (Are you surprised?)
    That last word, "surpris", sounds close enough to "suppli" to pass the juster year in general conversation.

    The issue I have with my own theory is that the Italians have no trouble with the phonetics of basic French. It's not like the Japanese who have trouble with the sound of the letter L. So why do they mispronounce this word?

    I'm serious. It makes no sense.

  6. i just starting watching this guy and as soon as he pulled out that specific mutti tomato puree now i know this guy is legit . i have the same one in the fridge now
