And as a Mexican, I can tell you we've been making tomato sauces in dozens of varieties for a long, long time. I myself make three or four varieties a month using red and green tomatoes.

The tomatoes we eat today have little to do with the tomatoes found in the Americas in the 1500s. Of course, it’s not like San Marzano tomatoes already existed in America back then.

Everyone ate tomatoes in Europe when they were brought over because they would grow so fast and in abundance. And it wasn’t believed for a long time that they were poisonous, it was only for a while because the rich folk silverware they used at the time would leave out lead because of the juices from the tomatoes. The juice of the tomatoes would have a chemical reaction with the plates and utensils and naturally the lead in them would come out. Thus giving everyone who ate them a lot on those silverware lead poisoning. Only the rich suffered from this tho because every other commoner was too broke to afford silverware of that manner and ate in wooden bowls etc. the poor who ate them had no illnesses because of that

The reason that people thought they were poisonous was because the aristocracy used lead and pewter plates and the tomatoes would leach it into them ultimately poisoning the rich. The poorer people who did not have lead and pewter plates but instead used wood didn’t have this problem.
Plantains aren't from Latino countries yet that's used so much. If it weren't for europeans to come to the American, Mexicans would never have cheeses. The Europeans showed them how to make cheeses. Both cultures sharing ideas with each other. I much MUCH prefer Italian tomato sauce rather than the others.
