Continuing the What I cook and Eat in a Week mini series. This is Tuesday’s dinner. Spicy Italian sausage with penne pasta.
Disclaimer: not my recipe, I just adjusted to my taste. Recipe can be adjusted to one serving.
Ingredients:
3 Cups of Penne pasta
1 onion, finely chopped
4 cloves garlic, minced.
1 package spicy Italian sausage, diced
1 can diced tomatoes (491 MLS)
½ tsp salt (add more as needed)
1 tsp black pepper
1 ½ tsp paprika
2 tsp Italian seasoning
Cook Penne pasta then drain and
separate pasta and pasta water and set aside.
Sauté onion and minced garlic.
Add sausage and sauté until cooked .
Once sausage is cooked, Add 1 can of diced tomatoes and season with: salt, black pepper, paprika and Italian seasoning
Let it simmer for 5 minutes
Add pasta to the cooked sausage, stir until combined and serve
Makes 4 servings
