RECIPE:
Pizza Dough:
8 ½ Cups (1000g/1kg) All-purpose flour
3 TSP (9g) Instant Yeast
2 TSP (10g) Kosher Salt
3 ⅓ Cups (800ml/800g) (80% Hydration) Warm Water (80°F – 90°F)
¼ Cup (55g) Olive Oil – cover the top, don’t mix in.
Pizza Sauce:
1 Can (3 ⅓ Cups/796ml/28oz) San Marzano Tomatoes
1 TSP (5g) Kosher Salt
1 TSP (3g) Black Pepper
1 TSP (1g) Dried Oregano
2 TBSP (⅛ Cup/28g) Olive Oil
1 TBSP (15g) Tomato Paste
Cheese: Fior di Latte
Pizza Dough / Pan Math
Measure your pan in centimetres (Length x Width)
Example:
If your pan is 20cm × 30cm
= 600 cm²
Total dough weight (in grams) = 600 ÷ 2 = 300g
To figure out your flour weight and 80% hydration:
Dived your 300g (your number) by 1.8
Flour = 300 ÷ 1.8 = 167g
Water = 167 × 0.8 = 133g

FYI, this is not pizza, it is a tomato pie, maybe, it is a pizza-like focaccia, maybe. Does it matter? But of course not. It looks delicious, not a pizza though.
Bro uses half a liter of olive oil on one pizza if you can call it that and doesn't cook his sauce. This pizza is going to be greasy af, way too expensive with all that oil, and taste like bitter ass.🤣Tomato sauce needs to be cooked don't be lazy.
You can just multiply by 6.5 to convert square inches into cm2
Намудрил с тестом. И так много масла в тесте было, которое не было вмешано , а потом он на смазанную доску выложил тесто и начал им елозить. Лучше было бы помять тесто, и выложить его, дав ещё полежать.
This didn't work for me, after 4 hours, the dough at the top of the bowl rose like in the video, while at the bottom of it, it just all clumped into small hard pieces, even though I mixed it until it looked like on the video before he put the oil on top.
The only real pizza is the deep pizza, and you gotta cook that sauce bro

You do realize that canned tomatoes are cooked in the canning process. They are not raw.
You can do it raw or cooked, the sauce. Give a reason why !

I am glad you are computing flour by weight and not volume. How many new recopies have been ruined by using too much or too little flour in making something because the volumes are off. Yes, always sift flour as you use them. I like your kitchen because it isn't ungodly huge like I see on some other cooking shows. This is a proper kitchen

In my youth I knew some college students who bought frozen bread dough to use for the crust. I prefer whole wheat in everything because enriched flour is devoid of flavor and nutrients.
