This was our evening at Kitan Hibiki in Dotonbori.

Nakai San trimmed, grilled, and plated the beef at the counter on the first floor while also managing at the second floor of the restaurant.

The steak was paired simply with fries, allowing the structure and flavor of the Wagyu to speak for itself.
