So much unnecesarry showboating and yet heat control, the most important factor with any sauce with significant hard cheese amounts in it, failed. From the amount of steam coming off the pan at the end, it's obvious immedeatly the cheese will denaturate and get clumpy.
It was alright! I think it needs more heat; going to try Calabrian chili paste next time, rather that the red pepper flakes.
