i work at the manufacturer of SW breads (as well as cookies pastries n breads for multiple customers) and the 11 inch thing was a big deal at first. Funny thing is nothing changed besides the way SW prepares the loafs. They just roll it out longer before proofing.

Several years ago Jimmy John's came to town. My husband and I ate there one (*1*) time and declared that we both hated everything about the restaurant, not just the horrible food. We've never been back.

when these guys do these measurements, it seems like it's for entertainment purposes and not for scientific reasons. People don't want to watch YouTube to be entertained. They want to watch to learn they want to see the scientific method they want to see not a wooden measuring stick but a calibrated digital device that can accurately measure the bread.
Or also forgetting about the density of the bread and the width of the bread and the height of the bread. This study is flawed in so many areas.
