My father was Italian and my mother was Polish. One of her best friends, who lived only a few houses away was Italian. She and my mother used to love to exchange recipes, especially around the holidays. This is a recipe that my mom got from her friend. This is a recipe for traditional Italian Christmas Jewels Cookies that my mother used to make often for Christmas.

Too bad you thought the cookies were a bit dry. 4 eggs and olive oil usually bring moistness to the texture. This recipe reminds me of an Italian friend’s recipe for ‘love knot’ cookies which contain ricotta cheese and anise flavoring. They look similar to yours and are also iced. I made these yesterday!
I made 50 small balls and baked them for only 10 minutes. Testing one, then I baked 1 more minute to get a perfect done but not dry result!
To make the icing I used only 1 cup of icing powder and added 2 tsp of almond extract plus a few splashes of water to get the consistency I liked.
I ended up with a not dry cookie with a great almond flavour that came through enough that my husband who did not know what ingredients I used commented on the nice almond flavour.

Mom also made these gems 1/2 the size. Grandpa made the CROWN JEWELS! I often find twice the amount of Almond extract is needed, as it is never a strong flavor, more of a trace flavor. Merry Christmas 🎄🎄🎄🎄
Hope you two have been enjoying a cozy and joyous Christmas! Despite your saying the cookies you made could use some improvement, I'll bet they still taste even better than the Stella D'Oro semi-sweet cookies my mom and I enjoyed together when she was alive. (She liked Almond Toast, Roman Egg Biscuits and Breakfast Treats the best.)
