When cooking and nostalgia unite, it is one fantastic – or as we like to call it, one Fran-tastic experience. In loving memory of her mother, she presents an ‘egg-citing’ recipe of baked eggplant that will make you go ‘Ammazza!’ (‘Wow!’ in Italian).

1 onion (finely chopped)
1-litre Italian tomato sauce
3 large pieces of fresh Italian mozzarella
8-10 fresh basil leaves
Corn oil
200 gms Parmesan cheese (grated)
1 tbsp sugar
