Sage and butternut gratin

Ingredients
– 2 butternuts, halved and sliced
– 50 g butter
– 3 small shallots, diced
– 4 cloves of garlic, diced
– 1 tbsp flour
– 250 ml vegetable stock
– 1 tsp onion powder
– 10 sage leaves
– 250 ml cream
– Salt and pepper, to season
– 50 g parmesan
– Thyme, to garnish

Method
1. Pre-heat the oven to 180°C.
2. In a sauce pan combine the butter, shallots and garlic. Cook until the shallots and garlic softens.
3. Add the flour to the pan while stirring, cook for 2-3 minutes.
4. Add the onion powder to the vegetable stock and add to the sauce pan while stirring.
5. Add the cream and sage. Season to taste and stir one last time.
6. Place a few spoons of your sauce on the bottom of the oven dish and spread it evenly.
7. Place the butternut pieces overlapping to the pan and add the remaining sauce to the dish and cover.
8. Cook for 20 minutes before adding the parmesan cheese over the dish and cook for an additional 20 minutes uncovered.
9. Garnish with thyme.
10. Enjoy!
