  5. This was great. Joe's special is great. Everyone here is killing it. Even the O'Conn-man with his absolutely wild takes on everything under the sun.

  6. A) you don't butterfly a chop that has a bone in…
    B) when you butterfly, put the fat xap on the board and cut down into the fat, not through it. The fat then becomes the 'hinge'.
    C) unnecessary, even reckless cutting off that fat cap.
    D) no need to tenderize a pork chop.

  8. Chris busting out the milk frother hahaha. at the end, I love how Chris walks far away to take his bite, then comes back to the plate for more. DeRosa's new special is the best special in a long time.
