Fresh Pappardelle with Bolognese Sauce Recipe:

Fresh Pasta
Ingredients:
    •    3 cups flour
    •    3 eggs
    •    4 oz water
    •    Pinch of salt

Instructions:
Combine flour, eggs, water, and salt until a dough forms. Knead briefly, shape into a ball, cover, and let rest at room temperature for 20 minutes.

Bolognese Sauce
Ingredients:
    •    3 tbsp olive oil
    •    1 lb ground beef
    •    ¼ lb ground sausage
    •    2 carrots, finely diced
    •    2 celery stalks, finely diced
    •    ¼ onion, finely chopped
    •    4 basil leaves
    •    4 parsley sprigs
    •    28 oz tomato sauce
    •    ½ cup red wine
    •    Salt & pepper, to taste

Instructions:
In a large pan, heat olive oil over medium. Sauté onion, carrot, and celery with salt and pepper for 5 minutes. Add beef and sausage; cook until browned, about 10 minutes. Deglaze with wine and cook until reduced. Stir in tomato sauce, herbs, and seasonings. Simmer on low for 1 hour.

To Assemble:
Roll rested dough through a pasta machine (settings 1 to 4), cut into Pappardelle, and let dry slightly. Cook in salted boiling water for 2 minutes. Drain and toss with the Bolognese. Top with freshly grated Parmesan.
