We’ve reached the final video in our collaboration with the Milano Cortina Winter Olympics 2026, and we are honored to have been part of this culinary journey. We close this chapter right here in Cortina, with 88-year-old Chiara. She is preparing a traditional dish from the region: casunziei, half-moon-shaped ravioli filled with beetroot and served with a rich butter and poppy seed sauce.
For the dough:
300g flour (with 30% rye flour, so about 90g rye flour and 210g all-purpose flour)
150ml water
For the filling:
50g flour
1 beetroot
4 medium potatoes
Salt, to taste
Pepper, to taste
A pinch of cinnamon
To serve:
Grated Parmesan cheese
Clarified butter
Poppy seeds

Beets have a lovely earthy sweetness. Their flavor shines through without being too sweet and the savoriness satisfies making the food a very filling dish. I have never thought of using beets in ravioli. This is totally new to me and makes me want to try it very soon! With Easter coming, this would be a delicious part of that celebrated Feast! I love beets, but slicing them does make your fingers look like you've been dipping them in blood, just like she says as she cuts them!

I like doing the toasted flour. For a long time I did not thicken sauces at all or just tossed in a bit of polenta to absorb the moisture. I finally decided I really want rich flavor filled sauces for my simple reheat suppers. Using the toasted flour in the filling looks like a versatile option.
