I took the rich, creamy goodness of classic spaghetti carbonara and gave it a Japanese-Korean twist—using thick, chewy udon noodles, a miso-infused carbonara sauce, and crispy pork belly instead of pancetta or guanciale. To build even more depth of flavor, I deglazed the pan with sake 🍶 and added a spoonful of gochujang for a subtle spicy kick (totally optional but highly recommended!). 🌶️🔥
