I don't even understand "baked ziti" let alone this mess. Why do these short cuts proliferate on the internet when there are so many examples of excellent Italian cooking out there?

We had "casseroles" very seldom in our house. My mom was 100% Italian. We feel the same as you. I've softened somewhat but wouldn't eat this if there was another option..
Not only do i Not wash my chicken or any meat, i try very hard (and waste a lot of paper towels in the process) to dry my protein. That has been the really significant game changer. Great video. I am getting some new ideas!

I think I will pass at making this dish and especially the way he did. For me there were too many mistakes in technique, lacking in complex flavours and the use of fake mozzarella is no for me. Why can’t Americans stop saying parmigaaan cheese and instead speak properly.
