  1. Folks, DO NOT sear meat at a high heat with Olive Oil- use Avocado oil, Beef tallow, Ghee, or coconut oil, all fats that have a high smoke point. Olive oil has some properties that can become oxidized/toxic when heated to that high of a degree. Olive oil should never be heated, best for finishing or dressings, but you diminish the good stuff in Olive oil when you heat it like this.
