


Make the stew:
Sauté down onion, then carrot & celery, add crushed tomato out of a can with the juice, 1 can rinsed cannellini beans, fill up your pot with water or veggie stock, simmer down. Add shredded kale.
Make the “crumbled sausage”:
Rehydrate TVP with warm Water, balsamic, soy sauce, garlic powder, onion powder, Italian spice blend. After 15 min, fry off in some olive oil.
Boil pasta following box instructions. I like smaller pasta shapes think orzo, macaroni, orecchiette.
Add a ladle or two of the stew to the sausage. Add a scoop of pasta water. Add the macaroni and mix.
Serve. Garnish with herbs if you’re feeling boujie.
