Octopus & Chorizo with Chipotle Aioli

Mama spotted this beautiful octopus and that was it โ€” the plan for the day was set ๐Ÿ™๐Ÿ’™ She couldnโ€™t wait to get home, roll up her sleeves, and turn it into something special for us. From the moment she brought it home, she couldnโ€™t stop talking about it โ€” how sheโ€™d cook it, what sheโ€™d pair it with, and how tender it would be if she just took her time.

And thatโ€™s exactly what she did. Slow, patient cooking, letting it simmer until perfectly tender, then finishing it with garlic, parsley, a little heat, spicy chorizo, and a smoky chipotle aioli that ties everything together.

This is Mamaโ€™s magic. She doesnโ€™t chase trends or repeat herself. Every dish has its own story โ€” and this one was written the second she laid eyes on that octopus๐Ÿฅฐ

Chipotle Aioli

Ingredients
โ€ข 1 egg yolk
โ€ข 3 tbsp chipotle purรฉe
โ€ข 1 garlic clove, minced
โ€ข 4 tbsp neutral oil
โ€ข ยฝ tsp cayenne pepper
โ€ข Juice of ยฝ lime
โ€ข Salt and black pepper, to taste

Method
Whisk the egg yolk, chipotle purรฉe, and garlic until smooth. Slowly drizzle in the oil while whisking continuously until thick and emulsified. Season with cayenne, lime juice, salt, and pepper. Set aside.

Braised Octopus

Ingredients
โ€ข 2 lb whole octopus
โ€ข Water, enough to cover
โ€ข ยฝ onion
โ€ข 1 lemon, quartered
โ€ข 3โ€“5 parsley sprigs
โ€ข Salt and pepper

Method
Combine all ingredients in a large pot and bring to a gentle simmer. Add the octopus and cook 40โ€“60 minutes (about 45 minutes per 2 lb) until fork-tender. Remove, drain, and cool slightly. Separate tentacles and transfer to a bowl.

Marinade

Ingredients
โ€ข ยผ cup olive oil
โ€ข 1 garlic clove, minced
โ€ข 4โ€“6 parsley sprigs, finely chopped
โ€ข Pinch chili flakes
โ€ข Juice of ยฝ lime
โ€ข Salt and pepper

Method
Mix all ingredients and toss with the warm octopus until well coated.

Chorizo

Ingredients
โ€ข ยฝ lb ground chorizo
โ€ข 1 tbsp oil

Method
Heat oil in a skillet over medium heat. Add chorizo and cook until fully browned and cooked through.

Serve the marinated octopus with warm chorizo and finish with a generous spoon of chipotle aioli.
