Italian MaMa shares another one of her delicious recipes!

Italian MaMa’s Sausage & Peppers Recipe: (can be reduced)
2.5lbs combined – Sweet and Hot Italian Sausage
8 Peppers (any color desired)
8-10 Sweet Onions (about 1 onion per pepper)
3.5lbs Red Potatoes
Salt and Pepper to taste
EVOO

Directions: Preheat oven to 350. Coat roasting pan with EVOO, place sausage in one layer and cook up to 40/45-min. Cut peppers and onions into strips. Warm EVOO in frying pan, cook separately until tender (about 20-min for peppers, 25-min for onions). Increase oven temp to 375, chop potatoes, coat with olive oil/salt/black pepper, and place in a single layer on pan. Roast until crispy (about 45-1hr). Slice sausage and combine all cooked ingredients. ENJOY!
