These moist and tender meatballs use fine Italian ingredients such as Parmigiano Reggiano (please don’t substitute ‘parmesan’) and mortadella. Mortadella is the original ‘bologni’ with better ingredients. It is also considered a flavor booster in authentic italian meat fillings for tortellini and ravioli. Like many recipes for ‘polpette’ in Italy, this italian meatballs recipe relies on potatoes instead of breadcrumbs to achieve their light and fluffy texture.

INGREDIENTS for Italian Grandma’s Best Italian Meatballs
ground beef – 11 ounces (300 grams )
ground pork – 7 ounces (200 grams)
mortadella – 2 ounces (50 grams) (substitute bologni or ham)
sausage – one, german-style
fine salt – to taste
black pepper – 1/4 teaspoon
nutmeg – 1/4 teaspoon
eggs – two
Parmigiano Reggiano – 2-3 Tablespoons
parsley – 1 Tablespoon, fresh and minced
garlic – one clove, grated or paste
potatoes- 250 grams (2); boiled, mashed and cooled
fine bread crumbs – as needed
crushed tomatoes – 2 cans
peanut oil – for frying
olive oil – as needed
