  2. My favorite is lemon pasta, which I have learned from you 😂. But recently I came to also like Pasta with tomato, salami and artichokes.

  3. 6:40 Spaghetti with big meatballs is an American thing, but spaghetti with teeny meatballs is an Italian thing indeed. And this is where the discussion sometimes arises where people say that spaghetti with meatballs don't exist in Italy. Of course they don't exist with big "American-style" meatballs, but they have always existed with teeny meatballs. Big meatballs in tomato sauce we make them as a second course and with the sauce we season the pasta.

  4. I really don't get how anyone could put cream into Pasta al Limone, not only because it's unhealthy and not even authentic, but also because dairy and citric acids don't go wrll together. I guess, most people proposing this are purging. Sorry, the idea of it alone sounds so disgusting that the thought of it alone makes me wanna vomit. And yes, I've read people on the internet writing about making lemon pasta and someone said, they didn't like creme in it because it was too fatty and the other poster came up with creme freche or another solution with lower fat content, instead of saying that there actually wasn't any cream in it. And I didn't intervene and say that it doesn't belong into that Pasta, because those posts were maybe 3 months old back then, and now seeing this, I'm pissed about not responding to those comments. Anyway, no cream in Limone, Carbonara or Vongole. Ever. Even if you're making food for your worst enemy.

    1 – Spaghetti Aglio Olio e Peperoncino 🤤
    The carbonara and ragu, those I've made better thanks to your video's, so thanks for that and keep up your video's on how to make the best Italian dishes…

We pasta lovers have a lot in common 😂I Love lemon 🍋 pasta The simplicity and aromas of Mediterranean cousin at its best ,of course tiny meatballs with spaghetti what's not to like xaxaxa ❤looove carbonara for that rich and peppery taste,of course ,also agree for the potato gnocchi it's the easiest way to introduce anyone to making fresh pasta simple and gorgeous ❤ the only one im not crazy about is the sea food pasta but that's on me 😂 so im trading this one for eggplant pasta it smells Mediterranean summer 🌞, thanks for the video Vincenzo 😊😊😊😊😊

  10. Madonna! Thought it would be: 5) Ravioli Carbonara, 4) Canneloni Carbonara, 3) Fettuccine Carbonara, 2) Buccattini Carbonara and 1) Spaghetti Carbonara (with guanciale carbonara as a special mention)

  13. Excellent choices, though my mixed meat ragu for me is my favourite. It takes leftover cuts from trimming briskets, pork butts and pork ribs and make a ragu using soffritto, tomatoes, red wine, parsley and basil served with strozzapreti.
    Gnocchi is my #2 mainly for sentimental reasons, it was the thing Nonna perfected and has been handed down to now our kids know how to make it now. We can use sage and butter, pesto or even bolognese sauce works well.
    #3 is another one of Nonna's, she took olio e aglio and added anchovies. Something I loved as a kid growing up and one I still love in my 40's. I know Vincenzo you are not the biggest fan of anchovy, I personally love it.
    #4 is Arrabbiata Calabrese. I always enjoyed Arrabbiata but it was not a top top favourite of mine until I discovered nduja. Now I can't get enough of the stuff.
    #5 is Carbonara, a classic for a reason. I was an adult when I tasted this proper for the first time, as this was something Nonna didn't ever make, she was from rural Veneto so not really that proficient in Roman dishes, I never liked the cream crap that you get in restaurants but when I tried it for the first time proper I was blown away.

  15. Really good choices here! My top 5 pastas are. Aglio e Olio, Spaghetti Carbonara, Penne alla Vodka, Bolognese sauce with mezzi rigatoni, and your Nona's mini meatball Spaghetti recipe! 🍝 ❤🤌🏼

  16. I have to admit this is a very neat and interesting top recipes. Also a good video but I have to admit I am not a fan of the spaghetti and meatball recipe idea. The boiling of the meat would quickly leach out most of their flavor into the stock water and I just don’t like the size of them.

  18. 1 – penne arrabbiata, 2 – spaghetti carbonara, 3 – Tortellini with browned butter and sage, 4 – Spaghetti bolognese, 5 – gnocchi with tomato and basil sauce 👍😋

  19. Aglio e Olio will always be my top 1, because you just can't beat the flavor that's packed into such a cheap dish. Also, once I mastered it (it's got a lot more nuance than I expected) it remained a staple in our house

  20. Il mio piatto preferito è sicuramente la pasta alla carbonara. L'unica cosa è che io preferisco fare la pasta con la pancetta perché c'è meno grasso ed è gia pronta a cubetti 🙂

  21. Great choices Vincenzo, Amatriciana is my favourite, #2 Tagliatelle Bolognese, #3 Beef ravioli in a tomato sauce with basil, #4 I know it's unheard of in Italy but chicken linguine and #5 spaghetti carbonara

  22. Hey Vincenzo, I work in transport, so i make long work days ( bewtween 8 and 10 hours ) do you have some quick meals I can make after a long shift. Because I do not have energy to cook for hours after work

  24. I once tried tossing the pasta, but I made a mess. 😀 Instead i stir vigorously now. Does tossing really make it even better?

    I am from Czech republic, but I do not cook czech food at home since it takes long and you can easily have very good czech food in a restaurant. I focus on studying and cooking Italian food at home. I try to get hands on good ingredients and your videos are really best for home cooking (also pasta grammar channel).

  26. I don’t know if it’s only in America or if it’s an Italian dish too, but I was wondering how you make Alfredo or just the Alfredo sauce, something tells me you don’t need heavy cream

  27. Carbonara and Lakme', perfecto! My favorite! Oh, but pasta with clams?!? Yes, positively, linguine with clams, my all-time favorite. Must agree with you, Vincenzo, this is the ultimate pasta. Makes me weep for those who don't realize how simply wonderful this dish is.
