Meat Loaf
Recipe courtesy of Ina Garten
Total: 1 hr 25 min
Cook: 1 hr 25 min
Yield: 6 servings
Level: Easy
Ingredients
1 tablespoon good olive oil
3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)
Directions
Preheat the oven to 325 degrees F.
Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don’t mash or the meat loaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Spread the ketchup evenly on top. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through. (A pan of hot water in the oven, under the meat loaf, will keep the top from cracking.) Serve hot.

Here's a tip I found today. You don't need chicken broth, just deglaze the pan with the onions with a little bit of water. My meatloaf came out great. I don't keep chicken broth in the house
I also substitute an open bag of crackers (crumbled of course) for the bread crumbs I didn't use any salt because of the salt on the crackers
I have used her recipe for many years doing it exactly like she does except for my topping is ketchup, brown sugar and a smidge of mustard all mixed together and added about 10 minutes before it’s done. It is slap your momma good! If you knew my momma you would know that’s a life threatening comment 😂so it’s really good 😂😂
Ok who is this
How can the ketchup still be the same after an hour in the oven?
I call BS
Oh my gosh! you put 5 levels high this recipe. Thank youuuuu!!!!! blessings.
Ina!! My husband loved it!! I added bell peppers and celery!!
I had no idea meatloaf could look so good. I raise my hat.
I've never ever been able to duplicate my mom’s meatloaf recipe! She has a lot of sage in it and whenever I try, the loaf turns out GREEN! This I can do though!
Hmm. I ended up cooking the meatloaf at 325F for one hour forty minutes and just put it back in the oven because the internal temperature was only 150 degrees. I had a pan of water (hot water from the beginning) on a lower rack and just pulled it out, thinking that might be the cause. Thoughts?

Great recipe….wonderful that you work so fast and say only what is necessary….and still make everything clear……..
You are great! most are trying to be entertainers, and they fail miserably…..just stroking their ego with the channel….
The recipe in the link says to cook at 325 degrees F, not 350. Which is it??
Is it 325 or 350 degrees F, the recipe says 325? Thx Ina!
My mother used to put the parsley in the meatloaf, not beside it, but thank you for posting and sharing
I'll be making that!
Is there a meatloaf for diabetics?
Ok is it just me or does she remind you of STOCKARD CHANNING RIZO in Grease. Just love her
I, too have tried to duplicate my Mom's wonderful meatloaf recipe. This is close. But I remember she added shredded carrots too. But she did NOT put it in a loaf pan; she did it your way and so do I. Thank you for your recipe – thank you AGAIN AND AGAIN! NOTICE TO ALL YOUNG'UNS OUT THERE. DON'T THINK YOUR MOTHER OR GRANDMOTHER WILL BE HERE FOREVER. IF YOU LOVE DISHES THEY MAKE, HAVE A NOTEBOOK IN YOUR PURSE OR CLOSE AT HAND AND ASK HER OR WATCH HER COOK. You will be grateful you did this later on in life. I wish I had done that.
Hi thank you for your amazing videos…. My question is can I use dries thyme instead of fresh in sauté onions?
Meatloaf is a favorite. I learn a lot from viewing these cooking channels. It's never boring. Great tips and this looks delicious 😋👍
