Sometimes I wonder why the Italian restaurants in my city don't just make Alfredo like this, instead of the weird heavy cream and garlic thing they make. Honestly, butter, pasta water and Parmigiano Reggiano just tastes to much better.

I asked an Italian resident friend if they have Alfredo pasta in Italy. He says "no". I showed him the pasta recipe videos. He says that 1: that's just an old pasta al burro recipe meant for sick people served in Rome and 2: the only "Alfredo" he knows is a friend from Guatemala🇬🇹.
