91 year old Enrichetta lives in the mountains behind Genova in Liguria, north west Italy. And she has been busy preparing special ravioli, which are served with dried maccheroni pasta in a meat broth. The filling includes marjoram, borage and offal, but don’t let that put you off. These are aromatic and delicious and a great way to celebrate Christmas.
