Butter, starch, & Parmigiana . I don't know why people think Italians uses a lot of cream or garlic. It's the proper ingredients, preparation, and the cuore. When I mean proper ingredients also means cuore(heart), your head too. Not only the quality of ingredients and or substitutions for example like bacon for guanciale. All that can be replaced. But the tradition is what I'm talking about.
I don't think ill ever be able to try Vincenzo's food in real life 🙁

Ive had mushroom risotto and love it. I saw pasta grammar make tomato risotto, and it want to make that next, but I'd love more risotto recipes!
