A delicious meaty sauce made in the slow cooker. You may call this recipe a stew, a spaghetti sauce, meaty tomato sauce… but Italians call it Sunday Gravy. Meaty sauce with pork, beef, and Italian sausage, which goes with any kind of pasta or rice. This recipe will make enough for a big Sunday meal and plenty of left over for the rest of the week. You can also freeze it for future use. One of my favorites from The Complete Cook’s Country TV Show Cookbook.
Serves 8+
Ingredients:
3 pounds or 1645g bone-in country-style pork spareribs
1 pound or 538g sweet Italian sausage
1 pound or 538g hot Italian sausage
1 ¾ pounds or 476g flank steak
1 – 28 ounces or 794g can diced tomatoes
1 – 28 ounces or 822g can tomato sauce
1 chopped large onion
½ cup or 118mL dry red wine
1 tablespoon or 15mL vegetable oil
3 tablespoons or 16g chopped fresh basil
1 tablespoon 3g fresh or dry oregano
12 garlic cloves
Black pepper
1 can or 170g can tomato paste
Cilantro or parsley leaves (optional)
Heat oil and cook sausages until brown; transfer to slow cooker pot.
Sauté onion with the oil left from sausages until brown.
Add to the onions the garlic, the oregano, and tomato paste.
Add the red wine and simmer until it reduces.
Transfer tomato paste mix to the slow cooker pot.
Add to the slow cooker pot the diced tomatoes and tomato sauce.
Submerge the steak and the ribs in the sauce.
Cover and cook in slow for 8 to 10 hours.
Remove the sausages and cut in small bite pieces.
Remove the flank steak from the sauce and shred or cut in bite pieces
Remove the spareribs and remove bones.
Stir the basil leave and the black pepper in the sauce.
Taste for salt and add salt if necessary.
Place the meat back into the sauce and keep warm until time to serve.
Serve over pasta or rice.
