Easy Chicken Parmesan Recipe!

+ Slice 2 chicken breasts horizontally into halves and pound flat.

+ Generously season both sides with salt, black pepper and dried Italian herbs mix and leave it for 30 min.

+ Preheat oven to 200C/400F. Line a baking tray with aluminium foil.

+ In a small saucepan heat 1 tbsp of olive oil, add 3 crushed garlic cloves and cook for 1-2min until fragrant. Add 1 tbsp of dried Italian herbs mix.

+ Pour in 1.5cups of tomato passata. Add 1/2 tbsp of onion powder and season with salt and black pepper. Cook for 5-7 min.

+ Cover each chicken piece in whey protein/almond flour, then in egg and finish in the pork crackles crumbs.

+ Heat around 1cm of oil in a skillet, add chicken halves and fry each side until golden. Remove it from the pan and put it on a rack to drain.

+ Arrange the chicken on the prepared baking dish, top with the tomato sauce, ham and cheese.

+ Bake it in the oven for 8 min and then broil it for 1-1.5 min to give it a nice colour. Serve it immediately with fresh basil if desired.
