  3. The creaminessss is 🤤😍… don’t eat meat I can’t anyway I can’t digest it due to many stomach and gut conditions.

    Veg heads lil tip: I add roast peppers as well as mushrooms. Roast peppers gives a similar flavour that the guanciale gives. Obviously not the same but it taste good.

    Honestly, it really makes no sense to add cream when pecorino, eggs, and pasta water already achieve the right consistency and creaminess.

  5. Nice! I've made my own stile,after i trow the eggs mixture with pecorino i take the pan out from the heat and keep mixing,after 20 seconds i put the pan on cooking on very low heat and add pasta water little by little and keep mixing for about 2-3 minutes until I get a thick cream .
    I want to be 100% that my eggs from supermarket are cooked well.
    But you're a master ! I love all you're videos ❤

  6. That looks great! Substitute for prosciutto? It's very expensive and hard to find thick cuts of it.
    BTW did you forget the black pepper?😂 I thought Carbonara needed lots of pepper?

  7. Bellissimo Vincenzo, amico! You know the secret that adding the pasta water makes the creamy sauce with the Pecorino Romano! Carbonara is one of my very favorite pasta dishes! Sometimes we use Bucatini here at home, other times Orecchiette, too. 😉
