Chicken Cacciatore
INGREDIENTS
CHICKEN BREAST- 2 nos
Olive oil-2 tbsp
Butter-2 tbsp
Onion Chopped-1small
Garlic minced-4 nos
Red wine-1/2 Cup
Chicken broth-1/2 cup
Tomato Diced-2 nos medium
Tomato Purée 1/4 cup
Capers-1 tsp
Olive-2tbsp
salt to taste
Black pepper crust-1 tsp
Floor- 1/2 cup
Lemon diced pulp-5-6
Oregano – 1 tsp
Basil -1 tbsp
Method-

Method-
Flatten the Chicken breast and remove fat from the side
Season flour with salt & pepper, dust Chicken breast from both sides. Remove excess flour from the chicken.
Heat a pan and add olive oil. Sauté chicken from both sides until it gets a nice brown color. Keep it aside.
Use the same pan to cook chopped onion. Add extra oil and butter if necessary.
Caramelize the onion so that its sweetness is reduced.
Add minced garlic and cook for a minute
Now add 1/2 cup of red wine and cook until it is reduced to half.
Add tomato purée, cook for 2-3 minutes. Next, add 1/2 cup of chicken broth. Bring to a boil, reduce and simmer for some time.
Your delicious chicken cacciatore is ready to be enjoyed.
