Caramelized Onion & Chicken Pizza

Ingredients/Cost:
1 chicken breast: $2.50
1 sweet onion: $1.00
5 oz mushrooms: $1.25
16 oz @traderjoes ready to bake pizza dough: $1.50
1 cup shredded mozzarella: $1.15
1 cup @traderjoes roasted garlic marinara: $0.80
2 tbsp oil: $0.60
1/2 cup flour: $0.20

1/4 tsp crushed red pepper: $0.05
1/4 tsp black garlic: $0.05
1/2 tsp @traderjoes pizza seasoning: $0.05

Total cost = $9.20 for a 12 inch pizza

Directions:

Makes one 12 inch pizza

1. Preheat the oven to 425F. Take dough out of the fridge to sit for ~20 minutes. Slice the onion, then place in a pan with 1 tbsp of oil and 1/4 tsp of salt. Cook over low heat, stirring occasionally, for ~25 minutes so the onions caramelize.

2. While the onions cook, combine the pizza seasoning, crushed red pepper, and black garlic and then season the chicken breast. Place a pan on the stove over medium heat and add 1 tbsp of oil, and when the oil is hot add the chicken and cook, flipping halfway through, ~10-12 minutes or until fully cooked. Once it is fully cooked, set it aside to rest.

3. While the onions and chicken cook, place the dough on a floured surface and roll into a circle ~13 inches in diameter. Place on a circular baking sheet/pizza stone and then fold over the edges to form the crust.

4. Wash and slice the mushrooms. Once the onions are nicely caramelized, add the sliced mushrooms to the pan of onions and turn the heat up to medium. Cook for ~10 minutes, stirring occasionally, until the mushrooms are cooked and have released most of their water (this will help prevent a soggy pizza).

5. While the mushrooms cook, Spread the marinara evenly across the surface of the dough and then do the same with the cheese. When the onion/mushroom mixture is done, spread it on top of the cheese. Place the pan on the middle oven rack and cook for ~10 minutes, or until the dough is cooked.

6. When the pizza is done, slice or cube the chicken and place on top. You could cook the pizza for another minute or two after adding the chicken, but this is optional (I find it helps the chicken “stick” to the pizza better).
