EDIT: People informed me that this recipe is indeed not for the classic neapolitan pizza for which the temperature should also be higher. Sorry for the confusion

    Recipe used:

    – 800g 00 flour
    – 500ml water
    – 25ml oil
    – 25g salt
    – 1g dried yeast
    – 10g sugar

Rest for 4-5 hours than make 6 small Dough ball, rest for some more 5-6 hours and then 3-5min in the oven at 300°C

If you have any advice on the recipe or anything else, feel free to share them with me!

No sugar or oil in classic neapolitain

Also you need a hotter oven like Ooni or Roccbox are selling

I don’t know or really care about the technical rules, neopolitan or otherwise. So far as a pizza goes, looks delicious. Nice puff up and crumb. I would definitely eat this while others are worrying about the rules. The fact that you posted it on the neopolitan sub vs. the regular pizza sub is why they’re giving you heat.

You need at least 24hrs. I normally wont do Under 48 hrs. Stretching could use some improvement.
Other than that good work and keep doing what you enjoy lad.

  5. The crust is already looking pretty good, nice and puffy. Maybe try turning the pizza halfway through so both sides get cooked more evenly. Keep it up!

You need more hydration. Go for 67-70%. You will get much softer pizza.
