  1. Bit strange combo but tasted superb..The usual tomato, pecorino, mozzarella, and then black pudding and sriracha sauce to finish it off.

  2. Nothing wrong with low moisture! So it’s not VPN but plenty of New York – Neapolitan hybrid places do it. But there’s a reason why they shred it – melts evenly and cooks faster so you can really bring out the cheese’s fat before the cornicione overcooks.
