    If you want to know more about the science behind this, it’s a good read. But it doesn’t drastically change your Neapolitan pizza game. Yes, it needs some skill to make good Neapolitan pizza but it isn’t rocket science. If you have the possibility to control temperature and maybe humidity during the fermentation stages, that’s an improvement. Also, some here use a measuring cylinder etc. Which they proof a piece of dough along the main do in it, to keep track of the volume increase.
