I’m getting increasingly curious about making pizza with fresh yeast, but nowhere in the area carries it.

I stumbled upon Vito Iacopelli’s video about making “fresh yeast” from dry yeast, which seems to be more like a Biga, than it does actual fresh yeast ([https://www.youtube.com/watch?v=f0LsLMS5DYM](https://www.youtube.com/watch?v=f0LsLMS5DYM)).

Has anyone here tried this recipe or something similar? If so, how did the results compare to using fresh yeast?

    I’ve never made it, I do sourdough. The store I shop at sells fresh yeast but it only lasts like a week before its not viable anymore so I don’t buy it. Sourdough pizza is the best.

    Honestly, fresh yeast can taste good, but you’re not that far off from sourdough. And sourdough is a lot easier to work with in the long-run than fresh yeast.
