    Looks delicious. How did you eat it with the thyme stems? Take them off?

    250 g bread flour

    307 g water

    13 g salt

    .1 g active dry yeast

    Bulk room temp ferment 8-12 hours

    Make dough balls then cold ferment for 72 hours

    Cook at 450 C
