If your question specifically concerns your pizza dough, please post your full recipe (exact quantities of all ingredients in weight, preferably in grams) and method (temperature, time, ball/bulk-proof, kneading time, by hand/machine, etc.). That also includes what kind of flour you have used in your pizza dough. There are many different Farina di Grano Tenero “00”. Yes. I worked for a pizzeria that had two of these ovens and we would do catering and music festivals and the like. The owner of that company teaches seminars for a company called “A Fire Within” which manufactures and sells the trailers and ovens. You can make excellent pizzas in them.

There’s at least one here in Bangkok. I haven’t had it unfortunately but the restaurant is a certified Neapolitan pizzeria and their main upscale restaurant is amazing, so I would expect the pizza from the truck to be pretty similar.

Yes! We are lucky enough to have a wood fired pizza trailer nestled just a little off our local mountain biking trails. Itās bike-in, bike-out, or a short walk on a paved trail from the nearest parking lot if youāre not a biker.
